INGREDIENTS
- 3 lbs party wings
- Zest of one lemon
- 4 tsp The Jerk Man’s Caribbean Curry Dry Rub
- 3/4 tsp paprika
- 1/2 TB brown sugar
- Salt (to taste)
- 2 tbsp finely chopped parsley (for garnish)
- 2 TB avocado oil
COOK
Step 1
Preheat oven to 400 degrees F.
Step 2
In a small bowl, combine the lemon zest, curry dry rub, paprika and set aside. Keep the brown sugar separate.
Step 3
Rinse the wings and pat dry. Place wings in a mixing bowl and toss with oil to evenly coat.
Step 4.
Add the brown sugar and approximately 3/4 of the seasoning mixture to the wings. Add salt. Toss again until well combined.
Step 5
Place wings in a single layer on a wire baking rack.
Add aluminum foil on the oven rack below to catch drippings. Bake for 35-45 minutes (until cooked through and crisp).
Tip: Cook an additional 10-20 minutes at 170 degrees F for extra crispy wings.
Step 6
Remove wings from the oven and transfer them to a serving platter.
Sprinkle with the remaining rub and garnish with parsley.
